Ingredients

  • 3 lb chicken
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • 1 lb boiling potatoes
  • 1 medium onion
  • 1/2 cup reduced-sodium chicken broth
  • 1 tablespoon fresh lemon juice

Instructions

  • Preheat the oven to 500°F.
  • Keep chicken dry, and then toss it with 1 tablespoon oil, 1 1/4 teaspoons salt, and 1 teaspoon pepper in a bowl.
  • Then arrange chicken with skin sides up, without the pieces touching the roasting pan and then leave a 2-inch border around edges of pan.
  • Then toss potatoes, onion with remaining tablespoon oil, remaining teaspoon salt, and remaining 3/4 teaspoon pepper in same bowl.
  • Then spread 1 layer around chicken with skin sides up. Then stir the broth and lemon juice and pour into pan around chicken and vegetables.
  • Roast the uncovered and wait until chicken is pale golden and cooked through for 30 minutes.
  • Remove the pan from oven and then preheat broiler.
  • Then broil chicken and vegetables 3 inches from heat until chicken is golden brown for 6 minutes.
  • Serve the chicken and vegetables with the pan juices.
