- 4 Sweet Potatoes
- 1 tablespoon coconut oil
- 3/2 tablespoon cumin seeds
- 1 onion diced
- 2 garlic cloves crushed
- ginger
- 1 green chilly chopped
- 1 tablespoon garam masala
- 1 tablespoon ground corriander
- 1/2 turmeric
- few tomatoes
- few chickpeas drained
- lemon wedges and coriander leaves
Instructions
- Prick the sweet potatoes all over with a fork, then put it in a baking tray and roast in the oven for 45 minutes until its tender when pierced with a knife.
- Then melt the coconut oil and then add the cumin seeds and fry for 1 minute until fragrant, then add the onion and fry it for 10 minutes until its softened.
- Put the garlic, ginger and green chilli into the pan and then cook it for 3 minutes. Then add the spices and tikka masala paste.
- Then cook it for a further 2 minutes until fragrant and then tip in the tomatoes.
- Then tip in the chickpeas and cook it for a further 20 minutes until thickened.
- Keep the roasted sweet potatoes on four plates then cut it open lengthways and spoon it over the chickpea curry and then squeeze it over the lemon wedges.
- Then scatter it with coriander before serving for tastes.
